Nettle Seed Hummus: A Wild Food Delicacy
Inspired by our exploration of wild and seasonal eating, this nettle seed hummus recipe brings the incredible nutrition and unique flavour of nature right into your kitchen. Nettle seeds, often overlooked, are a fantastic wild superfood, packed with vitamins, minerals and essential fatty acids. They offer a slightly nutty, earthy flavour that perfectly complements the creamy richness of traditional hummus.

Ingredients:
1 can (400g) chickpeas, drained and rinsed
2 tablespoons tahini
2-3 tablespoons fresh nettle seeds (or 1-2 tablespoons dried nettle seeds, lightly toasted if desired)
2-3 tablespoons fresh lemon juice (adjust to taste)
1-2 cloves garlic, peeled and roughly chopped
3-4 tablespoons cold water (or more, to reach desired consistency)
1/2 teaspoon ground cumin
1/4 teaspoon sea salt (or to taste)
Pinch of black pepper (optional)
A drizzle of oil, for serving
Fresh nettle leaves or a sprinkle of paprika, for garnish (optional)
Instructions:
Prepare Nettle Seeds:Â If using fresh nettle seeds, carefully strip them from the stalks. If using dried, you can lightly toast them in a dry pan over medium heat for 2-3 minutes until fragrant, being careful not to burn them. This enhances their flavour.
Combine Ingredients:Â In a food processor, combine the drained chickpeas, tahini, nettle seeds, lemon juice, chopped garlic, cumin, sea salt and black pepper (if using).
Blend to Smoothness:Â Begin to blend the ingredients. While blending, slowly add the cold water, one tablespoon at a time, until you reach your desired creamy consistency. You may need more or less water depending on your preference. Scrape down the sides of the food processor as needed to ensure everything is well combined.
Taste and Adjust:Â Taste the hummus and adjust seasonings as needed. You might want more lemon juice for more tang.
Serve:Â Transfer the nettle seed hummus to a serving bowl. Drizzle with a good quality oil and garnish with a few fresh nettle leaves or a sprinkle of paprika.
Enjoy:Â Serve immediately with warm pita bread, fresh vegetable sticks, crackers or as a spread in sandwiches and wraps.

Foraging Nettle Seeds:Â Nettle seeds are typically ready for harvest from late summer through autumn. Wear gloves to protect your hands from stings!
Storage:Â Store leftover hummus in an airtight container in the refrigerator for up to 3-4 days.
Spice It Up:Â For a little kick, add a pinch of cayenne pepper or a tiny amount of fresh chili to the food processor.
Creamier Texture:Â For an ultra-smooth hummus, you can peel the outer skins off the chickpeas before blending.
